Glarus gazpacho
Ingredients for 4 people
1 cucumber, peeled and seeded
3 tomatoes, peeled and seeded
1 hot pepper, seeded
1 slice of toast
1 clove garlic
½ l vegetable broth
50g Schabziger Stöckli or 50g Weiss Stöckli
Salt and pepper
Here’s how
Mix everything.
Chill for 4 hours before serving, then blend again and serve.
Garnish with crôutons and yellow pepper cubes.
