Faire cuire les asperges dans de l&rsquo;eau sal\u00e9e pendant 4 \u00e0 5 minutes, puis les \u00e9goutter et les passer sous l&rsquo;eau froide. Bien \u00e9goutter les asperges<\/li><li>Couper les tranches de lard en deux dans le sens de la largeur. Envelopper chaque tige d&rsquo;asperge avec 1\/2 tranche de lard. Chauffer l&rsquo;huile par portions dans une po\u00eale. Y faire revenir les asperges par portions pendant environ 4 minutes en les retournant. Retirer et garder au chaud<\/li><li>Saler et poivrer les asperges. Presser le citron. Faire fondre le beurre, ajouter le jus de citron. Disposer les tiges d&rsquo;asperges dans un plat et les arroser de beurre au citron. Saupoudrer d&rsquo;un peu de gros poivre et servir imm\u00e9diatement.<\/li><\/ol>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Pommes de terre Ch\u00e2teau \/ Pommes Ch\u00e2teau<\/h3>\n\n<ul class=\"wp-block-list\"><li>650 g de pommes de terre fermes \u00e0 la cuisson<\/li><li>50 g de beurre clarifi\u00e9 ou d&rsquo;huile d&rsquo;olive<\/li><li>1\/2 bouquet de persil hach\u00e9<\/li><li>Sel<\/li><\/ul>\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Voici comment proc\u00e9der<\/h3>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>D\u00e9couper dans les pommes de terre crues des quartiers d&rsquo;environ 5 cm en forme de demi-lune avec des extr\u00e9mit\u00e9s \u00e9mouss\u00e9es (tournure).<\/li><li>Placer une casserole d&rsquo;eau, porter l&rsquo;eau \u00e0 \u00e9bullition, plonger bri\u00e8vement les pommes de terre tourn\u00e9es dans l&rsquo;eau bouillante, puis les rafra\u00eechir imm\u00e9diatement \u00e0 l&rsquo;eau froide (blanchir).<\/li><li>Mettre les pommes de terre dans une passoire et les \u00e9goutter.<\/li><li>Chauffer le beurre dans une po\u00eale antiadh\u00e9sive et faire dorer les pommes de terre du ch\u00e2teau.<\/li><li>Laver et hacher finement le persil et en parsemer les pommes de terre du ch\u00e2teau avant de servir.<\/li><\/ol>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Sauce glaronaise (sauce au vin blanc et au schabziger)<\/h3>\n\n<ul class=\"wp-block-list\"><li>1 \u00e9chalote, finement hach\u00e9e<\/li><li>beurre pour faire revenir<\/li><li>2 dl de vin blanc<\/li><li>3 dl de fond (veau, volaille, poisson, l\u00e9gumes) ou de bouillon<\/li><li>2 jaunes d&rsquo;\u0153ufs<\/li><li>\u00bd cuill\u00e8re \u00e0 soupe de f\u00e9cule de ma\u00efs<\/li><li>1,8 dl de cr\u00e8me enti\u00e8re<\/li><li>sel, poivre blanc du moulin<\/li><li>100g de b\u00e2tonnets de s\u00e9rac<\/li><\/ul>\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Voici comment proc\u00e9der<\/h3>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Faire revenir les \u00e9chalotes dans le beurre.<\/li><li>Ajouter le vin et le fond ou le bouillon, faire r\u00e9duire \u00e0 1,5 dl, filtrer, remettre le liquide dans la casserole.<\/li><li>M\u00e9langer le jaune d&rsquo;\u0153uf, la f\u00e9cule de ma\u00efs, le s\u00e9rac et la cr\u00e8me, ajouter \u00e0 la r\u00e9duction, porter \u00e0 \u00e9bullition en remuant, assaisonner.<\/li><\/ol>","protected":false},"excerpt":{"rendered":"<p>Ingr\u00e9dients pour 4 personnes Asperges vertes r\u00f4ties enrob\u00e9es de bacon 20 tiges d&rsquo;asperges vertes (env. 850 g) 10 fines tranches de bacon fum\u00e9 pour petit-d\u00e9jeuner 3-4 cuill\u00e8res \u00e0 soupe d&rsquo;huile d&rsquo;olive Sel Poivre 1\/2 citron 50 g de beurre Poivre grossier Voici comment proc\u00e9der Laver les asperges et couper les extr\u00e9mit\u00e9s ligneuses.
