{"id":1597,"date":"2022-04-29T13:52:14","date_gmt":"2022-04-29T11:52:14","guid":{"rendered":"https:\/\/geska.brandneu.ch\/recipe\/pike-perch-in-the-schabziger-almond-crust\/"},"modified":"2022-06-23T13:45:25","modified_gmt":"2022-06-23T11:45:25","slug":"pike-perch-in-the-schabziger-almond-crust","status":"publish","type":"recipe","link":"https:\/\/schabziger.ch\/en\/recipe\/pike-perch-in-the-schabziger-almond-crust\/","title":{"rendered":"Pike perch in the Schabziger almond crust"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">for 4 people<\/h3>\n\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<ul class=\"wp-block-list\"><li>500 g pike perch fillets without skin<\/li><li>Salt, pepper<\/li><li>1 untreated lemon, grated zest and juice flour<\/li><li>1 free-range egg, whisked<\/li><li>50 g flaked almonds<\/li><li>50 g finely grated Schabziger<\/li><li>1 onion, chopped<\/li><li>1 tablespoon finely chopped dill<\/li><li>1 tablespoon finely chopped parsley<\/li><li>2 tablespoons light breadcrumbs 30 g butter<\/li><li>2 tablespoons peanut oil<\/li><\/ul>\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h4 class=\"wp-block-heading\">Vegetables<\/h4>\n\n<ul class=\"wp-block-list\"><li>200 g snow peas\/sugar snaps<\/li><li>2 slices of bacon, in fine strips<\/li><li>1\u20442 red chili pepper, in fine rings<\/li><li>1 onion, finely chopped<\/li><li>freshly ground black pepper<\/li><li>Sea salt<\/li><li>Lemon slices for the garnish<\/li><\/ul>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Here&#8217;s how<\/h3>\n\n<ol class=\"wp-block-list\"><li>For the vegetables, cut off the stem end of the snow peas and pull off the tough thread at the same time. Cut the pods in half diagonally. Pre-cook briefly in steam. Fry the bacon in a frying pan until crispy, add the onions and chili, add the snow peas and season. Keep warm.<\/li><li>Chop almond flakes, dry roast lightly in a frying pan, let cool.<\/li><li>Season pike-perch fillets with salt and pepper, sprinkle with lemon juice.<\/li><li>For the breading, mix lemon zest, toasted almonds, Schabziger, onions, herbs and breadcrumbs.<\/li><li>Turn fish fillets first in flour and then in egg, coat in almond paste.<\/li><li>In a frying pan, heat butter and peanut oil moderately. Fry fish fillets.
