{"id":1559,"date":"2022-05-10T11:02:08","date_gmt":"2022-05-10T09:02:08","guid":{"rendered":"https:\/\/geska.brandneu.ch\/recipe\/savoy-cabbage-parcel-with-barley-and-fig-filling\/"},"modified":"2022-06-23T13:45:25","modified_gmt":"2022-06-23T11:45:25","slug":"savoy-cabbage-parcel-with-barley-and-fig-filling","status":"publish","type":"recipe","link":"https:\/\/schabziger.ch\/en\/recipe\/savoy-cabbage-parcel-with-barley-and-fig-filling\/","title":{"rendered":"Savoy cabbage parcel with barley and fig filling"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Ingredients for 4 people<\/h3>\n\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<ul class=\"wp-block-list\"><li>12 large savoy \/ savoy cabbage leaves or sugar loaf leaves<\/li><\/ul>\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h4 class=\"wp-block-heading\">Filling<\/h4>\n\n<ul class=\"wp-block-list\"><li>1 tablespoon frying butter<\/li><li>240 g barley meal<\/li><li>4 dried figs<\/li><li>2 carrots<\/li><li>600 ml \/ 6 dl water<\/li><li>50 g Appenzeller cheese or Gruy\u00e8re, grated<\/li><li>50 g Schabziger, grated<\/li><li>3 tablespoons leeks, finely diced<\/li><li>freshly ground pepper<\/li><li>Chili powder<\/li><\/ul>\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h4 class=\"wp-block-heading\">Sauce<\/h4>\n\n<ul class=\"wp-block-list\"><li>2 tablespoons butter<\/li><li>4 tablespoons flour<\/li><li>2 dl \/ 200 ml white wine<\/li><li>1 dl \/ 100 ml water<\/li><li>1 dl \/ 100 ml cream \/ cream<\/li><li>freshly ground pepper<\/li><li>Schabziger, grated, for sprinkling<\/li><\/ul>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Here&#8217;s how<\/h3>\n\n<ol class=\"wp-block-list\"><li>Cut off stem end of figs, chop fruit into small cubes. Peel carrots, dice finely. Melt the butter in a frying pan, saut\u00e9 the barley meal, figs and carrots well, deglaze with water, bring to the boil, simmer over low heat for 10 minutes. Allow to swell on the turned off heat source for 30 minutes. Add Appenzeller cheese, Schabziger and leek. Seasoning.<\/li><li>Blanch savoy cabbage leaves in boiling water, rinse with cold water and place on a kitchen towel.<\/li><li>For the sauce, saut\u00e9 flour in the butter, stir in white wine and water, simmer over low heat for 10 minutes, stirring occasionally, add cream, season with pepper.<\/li><li>Preheat oven to 220 \u00b0C. Grease a large gratin dish.<\/li><li>Spread cereal mixture in the center of the blanched leaves, form packets.
