Take out the medallions, wrap them in aluminum foil and, to keep warm, put them in the oven.<\/li><\/ol>\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h4 class=\"wp-block-heading\">For the fried potatoes:<\/h4>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Add potatoes to salted water and boil until firm to the bite. (approx. 15min)<\/li><li>Then take out, dry and cut into cubes.<\/li><li>In the heated butter, fry the potatoes until golden brown.<\/li><li>At the end, season with salt, pepper and the herbs.<\/li><\/ol>\n<div style=\"height:8px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h4 class=\"wp-block-heading\">For the vegetable garnish:<\/h4>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Wash and peel the carrots, then cut into slices (Vichy).<\/li><li>The same with the zucchini.<\/li><li>Briefly saut\u00e9 the onion in the butter, then add the carrots and sugar and saut\u00e9.<\/li><li>Deglaze the whole with vegetable broth and wait until they are almost soft.<\/li><li>Just before the end, add the zucchini and season. Because the zucchini has a very short cooking time, they go in just before the end.<\/li><li>Finally, arrange everything nicely on a plate.
