Boil asparagus in salted water for 4-5 minutes, then drain and rinse under cold water. Drain asparagus well<\/li><li>Cut bacon slices in half crosswise. Wrap each asparagus spear with 1\/2 slice of bacon. Heat oil in batches in a frying pan. Fry asparagus in portions for approx. 4 minutes, turning. Take out and keep warm<\/li><li>Season the asparagus with salt and pepper. Squeeze the lemon. Melt butter, add lemon juice. Arrange asparagus spears in a dish and drizzle with lemon butter. Sprinkle with a little coarse pepper and serve immediately.<\/li><\/ol>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Castle potatoes \/ Pommes Ch\u00e2teau<\/h3>\n\n<ul class=\"wp-block-list\"><li>650 g waxy potatoes<\/li><li>50 g clarified butter or olive oil<\/li><li>1\/2 bunch chopped parsley<\/li><li>Salt<\/li><\/ul>\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Here&#8217;s how<\/h3>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Cut approx. 5 cm crescent-shaped slices with blunt ends from the raw potatoes (tourniquet).<\/li><li>Place a pot with water, bring the water to a boil, briefly place the tourned potatoes in the boiling water, then immediately quench with cold water (blanch).<\/li><li>Place the potatoes in a colander and drain.<\/li><li>Heat the butter in a non-stick pan and fry the castle potatoes until golden.<\/li><li>Wash and finely chop the parsley and sprinkle over the castle potatoes before serving.<\/li><\/ol>\n<div style=\"height:48px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Sauce Glaronaise (white wine sauce with Schabziger)<\/h3>\n\n<ul class=\"wp-block-list\"><li>1 shallot, finely chopped<\/li><li>Butter for steaming<\/li><li>2 dl white wine<\/li><li>3 dl stock (veal, poultry, fish, vegetables) or broth<\/li><li>2 egg yolk<\/li><li>\u00bd tablespoon cornstarch<\/li><li>1.8 dl whole cream<\/li><li>Salt, white pepper from the mill<\/li><li>100g Zigerst\u00f6ckli<\/li><\/ul>\n<div style=\"height:16px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<h3 class=\"wp-block-heading\">Here&#8217;s how<\/h3>\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Saut\u00e9 shallots in butter.<\/li><li>Add wine and stock or bouillon, reduce to 1.5 dl, strain, return liquid to pan.<\/li><li>Mix egg yolk, cornstarch, ziger and cream, add to the reduction, bring to a boil while stirring, season.<\/li><\/ol>","protected":false},"excerpt":{"rendered":"<p>Ingredients for 4 people Fried green asparagus wrapped in bacon 20 spears of green asparagus (approx. 850 g) 10 thin slices of smoked breakfast bacon 3-4 tablespoons olive oil Salt Pepper 1\/2 lemon 50 g butter Coarse pepper Here&#8217;s how Wash the asparagus and cut off the woody ends.
