Sauté onions and garlic in olive oil, add spinach and let it collapse, drain in a colander, squeeze gently. Allow to cool. Chop spinach. Mix the Schabziger with the spinach, season to taste.
Spread the filling evenly on the dough. Roll dough lengthwise. Allow dough roll to firm up in the freezer.
Preheat oven to 200 °C.
Cut the frozen roulade into 1 cm thick slices, place slices on a baking tray lined with baking paper. Bake in preheated oven at 200 °C for 17 minutes.

50 g grated Schabziger
