I am truly happy like a little child about working together with the inventors of the Glarner Schabzer. The Schabziger-Stöckli has already made it to the list of specialties in my younger years. Not only do I like the unique flavor, I love the versatility of our little mainstay. Chäs-Spätzli with Ziger or “Ziger-Hörali” as they are known especially in Glarus are classics – very fine classics. With a breath of fresh air and a little daring, I create a somewhat different recipe series with Schabziger. I remain true to my motto: simple, seasonal and simply uhuara guat are the recipes or. the dishes that arise from it.
